Introduction to Mazet : la factorie Mazet

Creating, learning and transmitting knowledge, these are the three character traits of Hugues Pouget, once Guy Savoy's pastry chef, and a famous chef in his own right before he opened his boutique, Hugo & Victor, a few years ago. Hugues Pouget's first encounter with the Praliné gave birth to the concept of Mazet's La Factorie, a unique place, the palace of the praline.

This rich, creamy paste made from grinding a mixture of dried fruits (mainly almonds and hazelnuts) with caramel or powdered praline now takes its place amongst French gourmet pastry-making with a farandole of cakes, choux pastries, ice-creams and other specialties. La Factorie is also a place where you'll want to learn new skills and create new recipes using our pralines. With his friend and 2015 World Jam Making Champion Stephan Perrotte, Hugues Pouget has created a range of jams related to our expertise. Our chocolate fondues have been reformulated in Mazet's La Factorie presentations. Finally, our cakes: Financiers, choux pastries, Chouquettes, logs, Saint Honorés, sponges, lemon and praline tarts, Succès, Paris-Brests or Brownies will more than satisfy even the most demanding palate.

A visit to Mazet's La Factorie right next to our historic shop in Montargis is therefore essential, as it is the only place in whole world where these delectable cakes and pastries can be procured.
